Head baker wanted in Union County

Now hiring: we are hiring a head baker in Union County, New Jersey. You will be based in a hotel pastry kitchen. What we are looking for: • Understanding of food-safety and HACCP basics • Familiar with deck, rack and convection ovens • Food handler / hygiene certificate The role involves rotate stock and follow FIFO on raw materials; knead and develop dough by hand and in the spiral mixer; weigh and mix flour, yeast, water and salt to the day's recipe; roll out short-crust and biscuit dough; laminate puff and croissant dough by folding in the butter; pipe and fill cakes, pastries and cream rolls.
