You should have: • Food hygiene / HACCP certificate • Quick and accurate on the weighing scales and order maths • Comfortable working in cold rooms and chillers On a typical shift you will debone shoulders, legs and loins with a boning knife; break down beef, mutton and chicken carcasses into primal cuts; stuff and link fresh sausages with casings; take customer orders and advise on cuts and cooking; keep HACCP hygiene records and sanitise the block and tools; portion steaks, chops and cutlets to the ordered weights. At least 6 year(s) in a similar role. Pay around $2,800 per month, based on your experience. Overtime paid at a premium rate. Full-time with occasional weekends.
