You should have: • Familiar with deck, rack and convection ovens • Able to stand for long hours in a hot kitchen On a typical shift you will pipe and fill cakes, pastries and cream rolls; prove dough in the proofer at the right temperature and humidity; proof and fry doughnuts, then glaze them; keep work surfaces and equipment clean to food-safety standards; weigh and mix flour, yeast, water and salt to the day's recipe.
