What we are looking for: • Knowledge of halal slaughter and handling where required • Able to identify primal cuts of beef, mutton and poultry • Comfortable working in cold rooms and chillers Day-to-day duties: • Trim fat, sinew and silver skin off the cuts • Monitor chiller and freezer temperatures to keep the cold chain • Dress the chilled counter and rotate stock by date • Portion steaks, chops and cutlets to the ordered weights • Weigh, price and label cuts for the display case Freshers welcome — about 1 years of practice is enough.
