Now hiring: we are hiring a head butcher in Gwalior, Madhya Pradesh. The role involves: • Break down beef, mutton and chicken carcasses into primal cuts • Trim fat, sinew and silver skin off the cuts • Vacuum-pack and wrap customer orders • Run the band saw to cut cleanly through bone • Sharpen and hone knives on a steel and whetstone • Keep HACCP hygiene records and sanitise the block and tools What we are looking for: • Able to use a band saw, grinder and sausage filler • Physically fit to lift carcasses and stand all day Freshers welcome — about 4 years of practice is enough.
