The role involves: • Break down beef, mutton and chicken carcasses into primal cuts • Mince meat and prepare keema on the grinder • Debone shoulders, legs and loins with a boning knife • Trim fat, sinew and silver skin off the cuts • Weigh, price and label cuts for the display case • Monitor chiller and freezer temperatures to keep the cold chain Ideal candidate: • Quick and accurate on the weighing scales and order maths • Knowledge of halal slaughter and handling where required At least 2 year(s) in a similar role.
