Ideal candidate: • Food hygiene / HACCP certificate • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry Day-to-day duties: • Dress the chilled counter and rotate stock by date • Keep halal cuts separated and clearly handled • Mince meat and prepare keema on the grinder • Break down beef, mutton and chicken carcasses into primal cuts • Portion steaks, chops and cutlets to the ordered weights 3+ years on the tools preferred.
