The role involves: • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Portion steaks, chops and cutlets to the ordered weights • Dress the chilled counter and rotate stock by date • Weigh, price and label cuts for the display case • Keep halal cuts separated and clearly handled Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Quick and accurate on the weighing scales and order maths 6+ years on the tools preferred.
