Urgent requirement: confectioner (Pennsylvania)

We are recruiting: we are hiring a confectioner in Lancaster County, Pennsylvania. You will be based in a hotel pastry kitchen. What we are looking for: • Understanding of food-safety and HACCP basics • Basic cake decorating and piping skills • Knowledge of dough fermentation and proving On the job you will handle: • Monitor oven temperature and baking time for each batch • Proof and fry doughnuts, then glaze them • Keep work surfaces and equipment clean to food-safety standards • Rotate stock and follow FIFO on raw materials • Score the top of loaves before baking • Knead and develop dough by hand and in the spiral mixer Freshers welcome — about 1 years of practice is enough.
