Vacancy available: we are hiring a counter butcher in Utah County, Utah. You will be based in a hotel or restaurant butchery. Requirements: • Able to identify primal cuts of beef, mutton and poultry • Physically fit to lift carcasses and stand all day The role involves: • Keep HACCP hygiene records and sanitise the block and tools • Dress the chilled counter and rotate stock by date • Season and marinate meat on request • Take customer orders and advise on cuts and cooking • Debone shoulders, legs and loins with a boning knife • Portion steaks, chops and cutlets to the ordered weights At least 6 year(s) in a similar role.
