Now hiring: we are hiring a counter butcher in Jackson County, Illinois. You will work at a busy retail butcher's shop. Day to day you will sharpen and hone knives on a steel and whetstone; debone shoulders, legs and loins with a boning knife; run the band saw to cut cleanly through bone; mince meat and prepare keema on the grinder. Requirements: • Food hygiene / HACCP certificate • Confident knife skills and safe blade handling Freshers welcome — about 5 years of practice is enough. $4,500 per month, negotiable for the right hands.
