Requirements: • Able to identify primal cuts of beef, mutton and poultry • Comfortable working in cold rooms and chillers • Food hygiene / HACCP certificate On a typical shift you will break down beef, mutton and chicken carcasses into primal cuts; run the band saw to cut cleanly through bone; keep HACCP hygiene records and sanitise the block and tools; keep halal cuts separated and clearly handled; mince meat and prepare keema on the grinder; sharpen and hone knives on a steel and whetstone. 3+ years on the tools preferred. $3,900 per month, negotiable for the right hands.
