You will knead and develop dough by hand and in the spiral mixer; keep work surfaces and equipment clean to food-safety standards; pipe and fill cakes, pastries and cream rolls; boil sugar syrup for glazes and icing; monitor oven temperature and baking time for each batch; prove dough in the proofer at the right temperature and humidity.
