Immediate opening: we are hiring a head butcher in Jersey County, Illinois. The job is in a hotel or restaurant butchery. Your main tasks: • Take customer orders and advise on cuts and cooking • Trim fat, sinew and silver skin off the cuts • Keep halal cuts separated and clearly handled • Sharpen and hone knives on a steel and whetstone Ideal candidate: • Physically fit to lift carcasses and stand all day • Able to use a band saw, grinder and sausage filler • Quick and accurate on the weighing scales and order maths 3+ years on the tools preferred.
