What we are looking for: • Knowledge of dough fermentation and proving • Understanding of food-safety and HACCP basics The role involves: • Decorate cakes with icing, fondant and fresh cream • Check finished products for colour, crumb and weight • Knead and develop dough by hand and in the spiral mixer • Keep work surfaces and equipment clean to food-safety standards • Load and unload the deck oven with a peel • Rotate stock and follow FIFO on raw materials $3,400 per month, negotiable for the right hands.
