You should have: • Knowledge of halal slaughter and handling where required • Comfortable working in cold rooms and chillers Day to day you will season and marinate meat on request; keep HACCP hygiene records and sanitise the block and tools; run the band saw to cut cleanly through bone; break down beef, mutton and chicken carcasses into primal cuts; stuff and link fresh sausages with casings; monitor chiller and freezer temperatures to keep the cold chain.
