Requirements: • Familiar with North Indian, tandoor and continental cooking • Able to lift heavy stock pots and sacks of supplies Day to day you will knead dough and bake breads such as roti, naan and paratha; plate and garnish dishes for a quick pass to service; prepare the mise en place before each service; follow standardised recipes and stick to portion sizes.
