You will debone shoulders, legs and loins with a boning knife; keep halal cuts separated and clearly handled; sharpen and hone knives on a steel and whetstone; stuff and link fresh sausages with casings; weigh, price and label cuts for the display case. Requirements: • Comfortable working in cold rooms and chillers • Able to identify primal cuts of beef, mutton and poultry 4+ years on the tools preferred. Rotating shifts.
