You should have: • 2+ years' experience as a baker • Familiar with deck, rack and convection ovens • Knowledge of dough fermentation and proving The role involves score the top of loaves before baking; load and unload the deck oven with a peel; monitor oven temperature and baking time for each batch; laminate puff and croissant dough by folding in the butter; shape loaves, rolls, baguettes and buns by hand.
