On a typical shift you will stuff and link fresh sausages with casings; trim fat, sinew and silver skin off the cuts; dress the chilled counter and rotate stock by date; portion steaks, chops and cutlets to the ordered weights; sharpen and hone knives on a steel and whetstone.
