Immediate opening: we are hiring a confectioner in Rice County, Kansas. The job is at an in-store supermarket bakery. Ideal candidate: • Able to work early-morning and night shifts • Familiar with deck, rack and convection ovens You will knead and develop dough by hand and in the spiral mixer; weigh and mix flour, yeast, water and salt to the day's recipe; rotate stock and follow FIFO on raw materials; prove dough in the proofer at the right temperature and humidity; laminate puff and croissant dough by folding in the butter; monitor oven temperature and baking time for each batch.
