The role involves break down beef, mutton and chicken carcasses into primal cuts; portion steaks, chops and cutlets to the ordered weights; sharpen and hone knives on a steel and whetstone; trim fat, sinew and silver skin off the cuts. Requirements: • 2+ years experience working as a butcher • Knowledge of halal slaughter and handling where required 3+ years on the tools preferred. We offer $140 per day plus benefits.
