You should have: • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler On a typical shift you will keep HACCP hygiene records and sanitise the block and tools; stuff and link fresh sausages with casings; dress the chilled counter and rotate stock by date; vacuum-pack and wrap customer orders; portion steaks, chops and cutlets to the ordered weights; mince meat and prepare keema on the grinder.
