Sausage maker wanted in Lane County

We are recruiting: we are hiring a sausage maker in Lane County, Oregon. You will work at a busy retail butcher's shop. The role involves: • Keep HACCP hygiene records and sanitise the block and tools • Weigh, price and label cuts for the display case • Take customer orders and advise on cuts and cooking • Vacuum-pack and wrap customer orders • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts What we are looking for: • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required Freshers welcome — about 2 years of practice is enough.
