You should have: • Quick and accurate on the weighing scales and order maths • Comfortable working in cold rooms and chillers On a typical shift you will sharpen and hone knives on a steel and whetstone; run the band saw to cut cleanly through bone; stuff and link fresh sausages with casings; keep halal cuts separated and clearly handled; trim fat, sinew and silver skin off the cuts.
