Your main tasks: • Take customer orders and advise on cuts and cooking • Dress the chilled counter and rotate stock by date • Sharpen and hone knives on a steel and whetstone • Keep HACCP hygiene records and sanitise the block and tools • Mince meat and prepare keema on the grinder • Trim fat, sinew and silver skin off the cuts You should have: • Knowledge of halal slaughter and handling where required • Physically fit to lift carcasses and stand all day • Comfortable working in cold rooms and chillers Freshers welcome — about 2 years of practice is enough.
