Urgent requirement: we are hiring a head baker in Pushmataha County, Oklahoma. Day-to-day duties: • Knead and develop dough by hand and in the spiral mixer • Weigh and mix flour, yeast, water and salt to the day's recipe • Score the top of loaves before baking • Load and unload the deck oven with a peel • Laminate puff and croissant dough by folding in the butter Requirements: • Familiar with deck, rack and convection ovens • Able to stand for long hours in a hot kitchen • Understanding of food-safety and HACCP basics Six days a week, one day off.
