Now hiring: we are hiring a sausage maker in Coles County, Illinois. You will be based at a busy retail butcher's shop. Requirements: • Physically fit to lift carcasses and stand all day • Confident knife skills and safe blade handling • Able to use a band saw, grinder and sausage filler The role involves: • Run the band saw to cut cleanly through bone • Season and marinate meat on request • Stuff and link fresh sausages with casings • Mince meat and prepare keema on the grinder • Keep HACCP hygiene records and sanitise the block and tools Six days a week, one day off.
