You will check finished products for colour, crumb and weight; laminate puff and croissant dough by folding in the butter; load and unload the deck oven with a peel; proof and fry doughnuts, then glaze them; monitor oven temperature and baking time for each batch; weigh and mix flour, yeast, water and salt to the day's recipe.
