We are recruiting: we are hiring a meat trimmer in Clay County, Florida. Day to day you will break down beef, mutton and chicken carcasses into primal cuts; keep halal cuts separated and clearly handled; sharpen and hone knives on a steel and whetstone; keep HACCP hygiene records and sanitise the block and tools; stuff and link fresh sausages with casings; vacuum-pack and wrap customer orders. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling Freshers welcome — about 6 years of practice is enough.
