The role involves: • Trim fat, sinew and silver skin off the cuts • Run the band saw to cut cleanly through bone • Weigh, price and label cuts for the display case • Keep HACCP hygiene records and sanitise the block and tools • Monitor chiller and freezer temperatures to keep the cold chain • Stuff and link fresh sausages with casings What we are looking for: • Clean, presentable and friendly at the counter • Confident knife skills and safe blade handling Freshers welcome — about 1 years of practice is enough.
