We are recruiting: we are hiring a dough maker in Kendall County, Texas. The job is at a café with an on-site bakery. Ideal candidate: • Able to lift 25 kg flour sacks • Knowledge of dough fermentation and proving On a typical shift you will pipe and fill cakes, pastries and cream rolls; rotate stock and follow FIFO on raw materials; knead and develop dough by hand and in the spiral mixer; shape loaves, rolls, baguettes and buns by hand; check finished products for colour, crumb and weight.
