You should have: • Able to stand for long shifts and work in heat • Sound knowledge of HACCP and food safety standards Day to day you will keep the station clean and sanitised throughout the shift; label and date all prepped ingredients in the walk-in; marinate meats and prepare curries, gravies and bases; prepare the mise en place before each service; cook dishes to order on the grill, fry and sauté stations; follow standardised recipes and stick to portion sizes.
