Your main tasks: • Keep halal cuts separated and clearly handled • Break down beef, mutton and chicken carcasses into primal cuts • Sharpen and hone knives on a steel and whetstone • Stuff and link fresh sausages with casings • Take customer orders and advise on cuts and cooking Requirements: • Able to identify primal cuts of beef, mutton and poultry • Comfortable working in cold rooms and chillers • Physically fit to lift carcasses and stand all day 4+ years on the tools preferred.
