You should have: • Basic cake decorating and piping skills • Accurate at weighing and following recipes On a typical shift you will check finished products for colour, crumb and weight; prove dough in the proofer at the right temperature and humidity; rotate stock and follow FIFO on raw materials; knead and develop dough by hand and in the spiral mixer.
