Day to day you will load and unload the deck oven with a peel; laminate puff and croissant dough by folding in the butter; prove dough in the proofer at the right temperature and humidity; score the top of loaves before baking; roll out short-crust and biscuit dough. You should have: • Able to work early-morning and night shifts • Able to lift 25 kg flour sacks • Accurate at weighing and following recipes Freshers welcome — about 2 years of practice is enough.
