You will break down beef, mutton and chicken carcasses into primal cuts; dress the chilled counter and rotate stock by date; keep halal cuts separated and clearly handled; keep HACCP hygiene records and sanitise the block and tools. Ideal candidate: • 2+ years experience working as a butcher • Comfortable working in cold rooms and chillers • Quick and accurate on the weighing scales and order maths Rotating shifts.
