Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Mince meat and prepare keema on the grinder • Portion steaks, chops and cutlets to the ordered weights • Weigh, price and label cuts for the display case • Monitor chiller and freezer temperatures to keep the cold chain • Trim fat, sinew and silver skin off the cuts You should have: • 2+ years experience working as a butcher • Knowledge of halal slaughter and handling where required • Comfortable working in cold rooms and chillers Six days a week, one day off.
