Now hiring: we are hiring a sausage maker in Calumet County, Wisconsin. You will be based at a wholesale meat market. Your main tasks: • Keep HACCP hygiene records and sanitise the block and tools • Sharpen and hone knives on a steel and whetstone • Debone shoulders, legs and loins with a boning knife • Vacuum-pack and wrap customer orders • Weigh, price and label cuts for the display case • Take customer orders and advise on cuts and cooking Requirements: • Able to use a band saw, grinder and sausage filler • Physically fit to lift carcasses and stand all day • Able to identify primal cuts of beef, mutton and poultry 3+ years on the tools preferred.
