Ideal candidate: • Good teamwork and clear communication under pressure • Able to read and follow recipes and dockets • Familiar with North Indian, tandoor and continental cooking Day to day you will check fryer oil and change it when it breaks down; chop, dice and portion vegetables, fish and meat; keep the station clean and sanitised throughout the shift; prepare the mise en place before each service; monitor food temperatures and run regular HACCP checks; marinate meats and prepare curries, gravies and bases.
