Ideal candidate: • Knowledge of dough fermentation and proving • Able to lift 25 kg flour sacks • Accurate at weighing and following recipes You will keep work surfaces and equipment clean to food-safety standards; boil sugar syrup for glazes and icing; knead and develop dough by hand and in the spiral mixer; check finished products for colour, crumb and weight; monitor oven temperature and baking time for each batch; weigh and mix flour, yeast, water and salt to the day's recipe.
