The role involves: • Monitor chiller and freezer temperatures to keep the cold chain • Trim fat, sinew and silver skin off the cuts • Sharpen and hone knives on a steel and whetstone • Mince meat and prepare keema on the grinder • Break down beef, mutton and chicken carcasses into primal cuts • Debone shoulders, legs and loins with a boning knife Requirements: • Quick and accurate on the weighing scales and order maths • Food hygiene / HACCP certificate • 2+ years experience working as a butcher Full-time with occasional weekends.
