Your main tasks: • Run the band saw to cut cleanly through bone • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Break down beef, mutton and chicken carcasses into primal cuts • Vacuum-pack and wrap customer orders You should have: • Confident knife skills and safe blade handling • Comfortable working in cold rooms and chillers • Physically fit to lift carcasses and stand all day Freshers welcome — about 5 years of practice is enough.
