The role involves monitor food temperatures and run regular HACCP checks; cook dishes to order on the grill, fry and sauté stations; prepare the mise en place before each service; check fryer oil and change it when it breaks down; follow standardised recipes and stick to portion sizes; prepare stocks, sauces and soups from scratch.
