Immediate opening: we are hiring a confectioner in Orleans County, New York. You will be based in a hotel pastry kitchen. You should have: • Accurate at weighing and following recipes • Basic cake decorating and piping skills • Able to lift 25 kg flour sacks The role involves: • Laminate puff and croissant dough by folding in the butter • Decorate cakes with icing, fondant and fresh cream • Prove dough in the proofer at the right temperature and humidity • Weigh and mix flour, yeast, water and salt to the day's recipe • Boil sugar syrup for glazes and icing • Shape loaves, rolls, baguettes and buns by hand Full-time, day shift.
