The role involves knead and develop dough by hand and in the spiral mixer; roll out short-crust and biscuit dough; grease and clean baking trays, tins and moulds; keep work surfaces and equipment clean to food-safety standards; load and unload the deck oven with a peel; prove dough in the proofer at the right temperature and humidity.
