You should have: • Food handler / hygiene certificate • Familiar with deck, rack and convection ovens Day-to-day duties: • Knead and develop dough by hand and in the spiral mixer • Boil sugar syrup for glazes and icing • Score the top of loaves before baking • Laminate puff and croissant dough by folding in the butter Rotating shifts.
