Head butcher wanted in West Sussex

Urgent requirement: we are hiring a head butcher in West Sussex, England. You will work at a wholesale meat market. You will break down beef, mutton and chicken carcasses into primal cuts; trim fat, sinew and silver skin off the cuts; keep HACCP hygiene records and sanitise the block and tools; vacuum-pack and wrap customer orders; run the band saw to cut cleanly through bone; take customer orders and advise on cuts and cooking. You should have: • Quick and accurate on the weighing scales and order maths • Confident knife skills and safe blade handling • Able to identify primal cuts of beef, mutton and poultry 4+ years on the tools preferred.
