Requirements: • Accurate at weighing and following recipes • Understanding of food-safety and HACCP basics Day-to-day duties: • Prove dough in the proofer at the right temperature and humidity • Monitor oven temperature and baking time for each batch • Laminate puff and croissant dough by folding in the butter • Load and unload the deck oven with a peel At least 6 year(s) in a similar role.
