Join our team: we are hiring a counter butcher in Camden County, New Jersey. The role involves trim fat, sinew and silver skin off the cuts; break down beef, mutton and chicken carcasses into primal cuts; portion steaks, chops and cutlets to the ordered weights; sharpen and hone knives on a steel and whetstone. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling • Able to use a band saw, grinder and sausage filler 6+ years on the tools preferred.
